Mandarin Almond Salad
from Michelle Bunn's kitchen
- 1 head of lettuce (I used a mix of butter lettuce and romaine)
- 2 stalks celery sliced
- 2 green onions chopped
- 1 can mandarin oranges drained
- 2 tbsp. parsley chopped
- 1 small package slivered almonds (combine almonds in non-stick pan with 2 tbsp. sugar and stir over low heat until sugar melts and browns). Let cool and break up pieces to put on top of salad.
Dressing
- 1/2 tsp. salt
- 2 tbsp. sugar
- 1 tbsp. white vinegar
- 1/4 cup salad oil
- dash of tabasco
- fresh pepper
Combine and toss with salad mixture, garnish with almonds!
